These Enchiladas are quite filling, so you may want to wait a few minutes before adding another one to your plate. (Stated from experience 😂)

Being this recipe requires cooked chicken, you can cook chicken specifically for this recipe with mexican style seasoning or you can use leftover chicken from another style chicken dish.

Many times I will use the previously deboned chicken from this roasted chicken recipe, which works great.

My sister was the one to share this recipe with me a couple years ago, and we’ve thoroughly enjoyed it.

  • 8 Flour tortillas
  • cooked chicken, chredded or in chunks
  • Ranch dressing
  • salsa
  • Shredded cheese
  • and optionally you can add rice, beans or sauted belle peppers.

Ranch Chicken Enchiladas Recipe

Ingredients

  • 8 Flour tortillas
  • 1-1 1/2 lbs cooked chicken, seasoned and shredded
  • 1-1 1/2 cups ranch dressing
  • 1-1 1/2 cups mild Salsa
  • 8 oz shredded cheddar cheese and/or Mexican melting cheese
  • Optional: Beans, rice or sauteed Belle peppers

Directions

  1. Preheat Oven to 375 Degrees F
  2. Prep Chicken, if not already cooked.
  3. Combine Ranch dressing and mild salsa together, then set aside.
  4. Lay out tortillas on counter or board and top with about 2 Tablespoons of chicken, a pinch or two of cheese and any additional ingredients of choice.
  5. Drizzle with ranch sauce and then fold tortilla ends over and roll up like a burrito.
  6. Place in a slightly greased 9×13 pan.
  7. Repeat with remaining tortillas.
  8. Once pan is full, pour remaining sauce over tortillas evenly.
  9. Top with a generous amount of cheese.
  10. Bake at 375 Degrees F for 25 to 30 minutes, or until bubbly and cheese is just starting to brown at the edges.

You can serve these with Cilantro, Chips and Salsa or as pictured you can top them with chopped Ice-burg Lettuce, Sour cream, Pico and Avocado
